5 cups mashed sweet potatoes
Cook until smooth
1/2 c. butter  and 1/2 cup dark brown sugar
- add 1 TBS cinnamon, 1/4 teaspoon nutmeg, 1/3 cup dry cherry, 1/2 cup raisins and 1/2 cup pecans.

That's what it says! :)  I would probably combine all of this and bake it for about 30 minutes at 350.

Florets from 4 stalks broccoli
1/2 cup raisins
1/2 T. chopped pecans
2 T. crumbled bacon

Mix and refrigerate.

One hour before toss.
Dressing
2 T. white vinegar
1/2 cup sugar
1 cup mayo
4 teas. mustard

Yep, I've had this. Pretty good.

Classic Tuna Noodle Casserole Recipe

1/2 c. chopped onion
1 c. cream mushroom soup
1 -6 oz evaporated milk
1/3 cup grated Parmesan cheese
1 - 7 oz can white tuna, drained
1 - 3 oz can chopped mushroom
1/2 c. chopped olives, black
2 T. minced parsley
2 t. lemon juice
3 c. cooked noodles, drained
green pepper
eggs, hard boiled

Bake at 375 degrees for 20 or 25 minutes.

I don't know how much green pepper or hard boiled eggs. I would use about 1/4 cup peppers and 2 hard boiled eggs.

Ingredients
6 or 8 potatoes
2 or 3 onions
1 stick butter

Don't peel potatoes - but do scrub them. :) Put small pieces of butter on bottom of 9X13 pan. Slice potatoes about 1/2 inch thick and place on top of butter. Put diced onions on top of potatoes and bake 1 to 1 1/2 hours at 350 degrees.

6 T. butter (melted)
Blend in 6 T. flour,1 tsp. salt, 1/8 tsp. pepper
Cook over low heat until bubbly.
1 1/2 cup chicken stock
1 cup cream or milk
Bring to boil and boil one minute stirring constantly.
Stir in 1 cup cut up chicken [cooked]
1 cup sliced mushrooms
1/2 cup chopped green pepper
1/4 cup pimiento
add 2 Tbsp. Sherry
substitute cooked ham for 1/2 chicken

Shrimp Casserole Recipe


Shrimp Casserole Recipe

9 c. water
2 lb. medium size fresh shrimp
1 T. lemon juice
1/3 c. chopped green pepper
1/4 c. chopped onion
2 T. butter or margarine, melted
1 (10 1/4 oz) can celery soup, undiluted
1 c. half and half
1/4 c. dry sherry
1/2 tsp. salt
1/2 tsp. pepper
3 c. cooked rice
Paprika
Parsley

1. Bring water to boil. Add shrimp. Cook 3-5 minutes. Drain well. Rinse with cold water. Peel and devein. Reserve 6 shrimp.
2. Combine soup, half and half, sherry, salt and pepper. Stir in shrimp, vegetables and rice.
5. Spoon into Pam sprayed casserole. Bake at 350 degrees for 15 - 20 minutes until bubbly. 6. Garnish with paprika, parsley, reserved shrimp.

Three Bean Salad


3 Bean Salad


1 can kidney beans-drained, mashed
1 can green beans, drained
1 can wax beans, drained
1 onion sliced thin
1/2 tsp pepper
3/4 c. sugar
1/2 c. vinegar
1/2 c. corn oil
1 tsp. salt

Combine all ingredients. Best if refrigerated for a few hours before serving.

Cheese Pudding Recipe


If you are looking for something to make with what you have one hand, this one is a winner! I LOVE cheese, although, if it were me I might have given it a different name. Pudding??? Maybe Cheesy Breakfast Casserole would be better, or Cheese Strata. Either way, this is definitely a pantry friendly recipe.

6 slices bread , buttered generously
1/2 lb. sharp grated cheese
2 cups milk
3 eggs beaten
1 tsp. salt
1 tsp. dry mustard

Remove crusts from bread-cube. Place cubes in a greased 1 1/2 qt. casserole alternately with cheese. Combine remaining ingredients and pour over casserole. Put casserole in pan of hot water. Bake at 325 degrees for 1 hour. Serves six.
Italian bread crumbs on top.

1 small ham (just a few pieces)
1 lb bean soup mix
6 c. water
2 tsp. salt
1 onion, chopped
2 cloves garlic
1 bay leaf
1 tsp. basil
2 cups solid pack tomatoes
1/2 cup chopped red peppers
1/2 cup chopped green peppers
1-3 tsp. chili powder
1 Tbsp. brown sugar
1/2 tsp. dry mustard
2 tsp. each chopped parsley, celery, paprika, lea and perrins (worcestershire sauce), lemon juice

Place ham, beans, H20, salt in pot-cover and cook until beans are tender--add rest cover and simmer at least 1 - 1 1/2 hours.

Dad used to always made bean soup--I guess he got his taste for it from Grammy.

Such a great recipe for a cold winter day. Oh! And it looks gluten, soy and dairy free, too. Yay!

Crab Casserole Recipe

12 slices of stale bread cut in cubes
1 lb. backfin [crab]
7 hard boiled eggs, diced
1/4 cup chopped onion
4 Tbsp. chopped parsley
2 1/2 cups mayonnaise
2 1/2 cups milk
Sharp Cheddar cheese to sprinkle on top

Mix all together; sharp cheese on top; bake 45 minutes in a 325 degree oven.

Quaker Oat Meatloaf Recipe
























Quaker Oat Meatloaf Recipe


1 1/2 lb ground beef
3/4 c oats, uncooked
1/4 c chopped onion (Grammy's note--add green pepper)
1 1/2 tsp. salt
1/4 tsp. pepper
1 cup tomato juice (Grammy's note--V8 better)
1 egg, beaten

Combine. Pack firmly into an ungreased loaf pan. Preheat oven to 350 degrees - bake 1 1/4 hours.

About Grammy





Grammy was born in 1915 and passed on at the age of 90! She loved to serve a good meal to her family and frowned upon anyone who would not eat more than their share :)

I remember her tastes to be very elegant, from her clothes and jewelry, to her apartment decor, her hobbies and entertainment choices, and especially her food. It shocked me often when she took us to McDonald's --but she loved us and she knew what we liked!

The foods I remember most are her pineapple salad and her Waldorf salad. The pineapple salad was simple, yet as everything, presented in a decorative way. The Waldorf salad was certainly not one of my favorites, but I ate it--otherwise I would suffer the frown and the wagging finger :)( I wish it was that easy with my children!)

I remember other foods that she served us as well, but no recipes were needed for these-english muffins every morning with lots of real butter, ice cream with lots of chocolate syrup, and just about anything she knew we liked. My little brother was bombarded with chocolate covered raisins throughout his life!

I hope to remember more foods that she served us as I go through her recipe box and post them on this blog. But if not, it will still be an adventure as many of her recipes are very unusual to my "down home" tastes. (case in point-Sparkling Beet Cups and Tuna Jello Salad)

Spinach Dip Recipe






Spinach Dip Recipe



1 cup Hellmann's Light Reduced Calorie Mayonnaise
1 1/2 cups sour cream
1 pkg. (10oz) frozen chopped spinach, thawed, drained
1 pkg. (1.4oz)Knorr vegetable soup and recipe mix
1 can (8oz) water chestnuts, drained, chopped (optional)
3 green onions, chopped

Stir all ingredients until well mixed. Cover; chill. Makes 3 cups.



**This dip has become one of our favorite foods. Anytime we have a potluck, one of my daughters asks for this dip. It is delicious and so easy! 

The last time I made it I skipped the water chestnuts and the green onions and it was just as good. 

Also, the amount of spinach in it does not have to be exact. And I certainly NEVER use Light Reduced Calorie Mayo as called for in the recipe. I like my mayo full fat - full flavor.

This is a very forgiving dish. 

Turkey Florentine Recipe









Turkey Florentine Recipe


8-pound Butterball breast of turkey, thawed
1 package (6 ounces) long grain and wild rice mix
1 package (10 ounces) frozen chopped spinach, thawed, drained
3/4 cup diced fully cooked ham

Roast turkey according to package directions. Prepare rice according to package directions. Stire in spinach and ham. Place in 1 1/2 - quart buttered casserole. Bake with turkey last 45 minutes of roasting time. Slice turkey and serve with florentine rice.



Pear Spinach Salad Recipe





Pear-Spinach Salad Recipe with Dressing


Core and slice 2 pears, combine with
4 cups torn spinach
chilled torn lettuce
-drizzle with lemon nut dressing-


Lemon Nut Dressing1/3 cup coarsely chopped walnut
Bake 350 degrees 10 min- 12 min.

Combine with:
1/2 cup salad oil
3 Tbl. lemon juice
2 Tbl. vinegar
1/4 tsp. salt
1/4 tsp. sugar
1/4 tsp. tarragon
1/2 tsp. pepper
1/4 tsp. grated lemon peel
Mix well.

Okay, I tried this and it just didn't go over well with my family, or me. I tried to like it, but the lemon dressing is too lemony!
You'll like it if you like lemon--but I would have preferred some ranch dressing!

Cranberry Orange Salad Recipe

This looks easy, and good. But what is orange cranberry relish??
Grammy really liked using jello!


3/4 cup boiling water
1 pkg. lemon gelatin
Orange cranberry relish, frozen

Hippy Salad Recipe

Ok, so this is probably not called "Hippy" Salad, or is it? One thing about Grammy--I can't read her writing (and I don't think I'm the only one!) This recipe was from one of her very good friends and it looks really good!



1- 16 oz can whole cranberry sauce
1- 11 oz can mandarin oranges (drained)
1/2 cup sour cream
1/4 cup nuts
1 3 oz package cherry Jello
1 cup boiling water

Dissolve jello with water, beat in sour cream and cranberry sauce-fold in nuts and oranges.

This is gluten free--just watch the sour cream. I buy Daisy brand sour cream.
Also, I think Jello is also soy free. So this would be soy free and gluten free. Always read labels!

Crab Salad Stuffed Avocado Recipe

I do remember Gram's fondness of Worcestershire sauce. I still don't know the proper way to pronounce it though!


Crab Salad Stuffed Avocado

2 ripe avocados chilled
1 lb. backfin crabmeat

Dressing:
1/2 c. salad dressing
1/2 c. finely chopped celery
1/4 c. finely chopped pimiento
2 tsp. lemon juice
dash Tabasco
1/8 tsp Worcestershire Sauce


Halve avocado lengthwise - remove pits and peel, sprinkle with lemon juice and salt. Arrange each half on bed of greens. Fill with crab meat, top with dressing.

I'm gluten free, along with my kids. This recipe looks gluten free--you would just have to watch the worcestershire sauce--I get Lea and Perrins. (Always read labels! Don't take my word for it.)
My sister LOVES avocado and it's wearing off on me. Crab salad with avocado sounds really good, or it could even be chicken salad with avocado to make it a less expensive dish.

Savory Eggs Recipe



1 c. grated cheese--sharp cheddar
2 Tblsp. butter
1/2 cup H & H ( half and half??)
1/2 tsp each salt and pepper
1 tsp prepared mustard
6 beaten eggs
a little garlic
Optional-Sauted onions and green pepper.

Place cheese in greased 8 inch baking dish-Dot with butter.
Beat together eggs, cream and seasoning. Pour over cheese.
Bake at 325 degrees for 35 to 40 minute.
Serves 6-May be doubled-takes longer to bake.
