Fish Tomato Bake Recipe
2 lb. firm fleshed fish fillets, deboned (haddock, turbot, etc.)
2 medium onions, sliced
3Tbsp. oil
1 lb. can tomatoes, chipped, plus their juice
1 garlic clove, crushed
1 Tbsp. lemon juice
1-1 1/2 Tbsp. Old Bay Seasoning
1 tsp. sugar
Place fish fillets in baking dish. In small saucepan, saute onions in oil. Add remaining ingredients and simmer 15 minutes. Pour sauce over fish and bake at 350 degrees until fish flakes, 20-30 minutes.
