Crab Casserole Recipe




Crab Casserole Recipe


12 slices of stale bread cut in cubes
1 lb. backfin [crab]
7 hard boiled eggs, diced
1/4 cup chopped onion
4 Tbsp. chopped parsley
2 1/2 cups mayonnaise
2 1/2 cups milk
Sharp Cheddar cheese to sprinkle on top

Mix all together; sharp cheese on top; bake 45 minutes in a 325 degree oven.

Spinach Dip Recipe



1 cup Hellmann's Light Reduced Calorie Mayonnaise
1 1/2 cups sour cream
1 pkg. (10oz) frozen chopped spinach, thawed, drained
1 pkg. (1.4oz)Knorr vegetable soup and recipe mix
1 can (8oz) water chestnuts, drained, chopped (optional)
3 green onions, chopped

Stir all ingredients until well mixed. Cover; chill. Makes 3 cups.



**This dip has become one of our favorite foods. Anytime we have a potluck, one of my daughters asks for this dip. It is delicious and so easy! 

The last time I made it I skipped the water chestnuts and the green onions and it was just as good. 

Also, the amount of spinach in it does not have to be exact. And I certainly NEVER use Light Reduced Calorie Mayo as called for in the recipe. I like my mayo full fat - full flavor.

This is a very forgiving dish. 

Speedy Gazpacho Recipe

Speedy Gazpacho

2 - 10 3/4 oz cans of condensed tomato soup
2 envelopes or cubes of instant beef broth
1/4 cup red wine vinegar
1 Tablespoon salad oil
1 teaspoon salt
1 Tablespoon Worcestershire sauce
dash of Tabasco
2 medium tomatoes, chopped
1/4 cup chopped green pepper
2 Tablespoons minced onion

In large bowl pour undiluted soup. Heat to boiling 2 soup cans of water. Remove from heat and stir in beef broth until dissolved. Add broth to tomato soup. Stir until blended. Stir in remaining ingredients. Cover and refrigerate. When serving, the soup can be garnished with corn chips.

Hot Sausage Balls Recipe

Hot Sausage Balls Recipe

1 lb hot sausage
10 oz sharp cheddar cheese
3 1/2 cups Bisquick

Brown sausage, drain grease. Take out of skillet and use skillet to melt cheese. Mix all ingredients together. Roll into 1 " balls. Bake 10 minutes at 400 degrees.



This is handwritten, it says the recipe is from Nancy.

This must be one of those classic, well known recipes - I've had them and got the recipe from someone a few years ago. The kids really like them (before we went gf).

They didn't turn out very well with gluten free flour, probably because the gf flours absorb more liquid, so they were too dry.

Spinach Dip, Cucumber Dill Dip, Shrimp Louis Dip and French Onion Dip




Cucumber Dill Dip

1 pkg. (8oz) cream cheese, softened
1 cup Hellmann's Light Reduced Calorie Mayonnaise
2 medium cucumbers, peeled, seeded, chopped
2 Tbsp. sliced green onion
1 Tbsp. lemon juice
2 tsp. snipped fresh dill or 1/2 tsp. dried dill weed
1/2 tsp. hot pepper sauce

Beat cream cheese until smooth. Stir in remaining ingredients until well mixed. Cover; chill. Makes 2 1/2 cups.



Shrimp Louis Dip

1 cup Hellmann's Light Reduced Calorie Mayonnaise
1 cup sour cream
1/3 cup finely chopped green pepper
1/4 cup chili sauce
1 Tbsp. prepared horseradish
1/4 tsp. salt
1/8 tsp. freshly ground pepper
2 cups finely chopped cooked shrimp

Stir all ingredients until well mixed. Cover; chill. Makes 3 cups.



Spinach Dip

French Onion Dip

Stir all ingredients until well mixed. Cover;chill. Makes 2 1/2 cups.

1 pound crabmeat, regular
1/2 cup chile sauce
5 Tablespoons catsup
4 Tablespoons horseradish
3 teaspoons worcestershire sauce
Dash red pepper
1/2 cup mayonnaise
1 teaspoon salt
1 teaspoon paprika
2 Tablespoons sherry
Mix ingredients well and serve with chips or crackers.

Dip Recipe


Dip
4 slices bacon
8 oz fresh mushroom chopped--3 cups full
1 med. onion finely chopped (1/2 cup)
1 clove garlic minced
2 Tablespoons all-purpose flour
1/4 tsp salt
1/8 tsp pepper
1 - 8 oz package cream cheese, cubed
2 tsp worcestershire sauce
1 tsp soy sauce
1/2 cup dairy sour cream
Cook bacon till crisp-drain reserving 2 tsp of drippings. Crumble bacon; set aside. Cook mushrooms, onion and garlic in drippings till tender and most of liquid evaporated. Stir in flour, salt and pepper. Add cream cheese , worcestershire sauce and soy sauce. Heat till cheese is melted. Stir in sour cream and bacon. Heat this.
Serve warm.

This looks like it would be really good as a stuffed mushroom stuffing too.

Toasted Pecans Recipe


Toasted Pecans Recipe

Place pecans in a shallow pan in a 200 degree oven. When they take on a shining appearance add melted margarine: 3 Tablespoons for 8 ounces, 6 Tablespoons for 16 ounces. Stir to coat pecans. Salt to taste while turning.
Place pecans back in oven for at least 2 hours.

I don't remember this recipe. Of course I have a sweet tooth, so I wouldn't remember anything that isn't sweet :)

Sugared Pecans Recipe


Sugared Pecans Recipe

1 lb. pecans
3/4 teaspoon salt
1 teaspoon cinnamon
1 cup sugar
1 egg white
1 Tablespoon water

Beat egg whites and water till frothy (not stiff). Stir in sugar, salt and cinnamon. Add pecans and stir well until completely covered (???). Spread nuts on large baking sheet and bake at 200 degrees.

I remember Grammy's pecans, she would have them every year for Christmas. They are very good--I will definitely be making these soon. Now that I think about it, I thought she used walnuts...either way, these are yummy!
I don't know how long to bake these, so I googled sugared pecans and found Simply Recipes.
Their recipe for sugared pecans uses a 300 degree oven. They bake for 30 minutes, and half way through they stir them up with a fork. Grammy's recipe says 200 degrees--so it would be longer.
This recipe at Cooks.com says to bake for 45 minutes in a 200 degree oven, stirring every 15 minutes.

Three-in-One Dip Recipe


Three-in-one Dip
1 jar (8 ounces) cheez whiz process cheese spread
1 container - 8 oz Philadelphia brand soft cream cheese
1/2 cup chunky salsa
Mix with electric mixer.

Clam Dip Recipe


Clam Dip

1 (7 oz) can minced clams
1 (3 oz) package cream cheese at room temperature
4 Tablespoons sour cream
1 Tablespoon Worcestershire sauce
1 Tablespoon grated onion
dash of cayenne
salt

Drain clams. Combine.

Short, sweet and to the point.
Grammy is the Queen of entertaining, I remember her dips and appetizers much more than her dinners. She always had a huge spread.

Curried Liver Pate Recipe




Curried Liver Pate
8 oz chicken livers
1 Tablespoon butter
2 hard cooked eggs
1 small onion
1/4 cup mayonaise
1 Tablespoon lemon juice
1 teaspoon curry powder
1/2 teaspoon paprika
1/4 teaspoon salt
dash pepper
1/4 teaspoon dry mustard
finely snipped parsley
Brown chicken livers in butter. Puree liver, eggs, and onions until fine. Blend in mayonnaise, lemon juice, curry powder, salt, pepper, paprika and mustard. Line small bowl with clear plastic wrap. Spoon mixture into bowl. Cover and chill. Unmold into serving dish; peel off wrap. Sprinkly with parsley- 1 3/4 cups.

I don't know what that last 1 3/4 cups means--do you put 1 3/4 cup parsley on the pate? Does it make 1 3/4 cups of pate? I don't know. I do know that this is probably good. I have eaten chicken livers before. Mainly because I was at a Japanese grill and didn't know what to order. Not that bad.
Grammy has a way of writing with that is new to me. It's a c with a line over it. I always do w/. Maybe I'll adopt her way of doing it......
