Cranberry Orange Salad Recipe

This looks easy, and good. But what is orange cranberry relish??
Grammy really liked using jello!


3/4 cup boiling water
1 pkg. lemon gelatin
Orange cranberry relish, frozen

Hippy Salad Recipe

Ok, so this is probably not called "Hippy" Salad, or is it? One thing about Grammy--I can't read her writing (and I don't think I'm the only one!) This recipe was from one of her very good friends and it looks really good!



1- 16 oz can whole cranberry sauce
1- 11 oz can mandarin oranges (drained)
1/2 cup sour cream
1/4 cup nuts
1 3 oz package cherry Jello
1 cup boiling water

Dissolve jello with water, beat in sour cream and cranberry sauce-fold in nuts and oranges.

This is gluten free--just watch the sour cream. I buy Daisy brand sour cream.
Also, I think Jello is also soy free. So this would be soy free and gluten free. Always read labels!

Gotterspeise Gods Meal

Gotterspeise is translated as "food of the gods" and "jelly" and "Jell-o". Hmmm...who knew that jell-o was so good that even "the gods" like it?

This is handwritten, so this is my best attempt at a translation.





Gotterspeise Gods Meal



1 jar (1 pound 1 oz) dark sweet pitted cherries, leaving fruit in jar refill jar c light rum (I'm guessing this means that you should drain the juice from the jar, then fill back up with light rum.)
Marinate in refrigerator for 3 days.
Dry (?) slices of dark pumpernickel bread for 2 - 3 days - grate into 2 cups of crumbs which resemble coarsely ground coffee. ( I can't figure out how many slices you need.)

When ready to assemble dessert, drain cherries - reserving the rum. Add rum to crumbs until slightly moist. Whip 1 pt. whipping cream then add half of whipped cream to crumbs.

Fill 4 parfait glasses: (This is my interpretation of what she wrote - not verbatim.)

1. Dollop of whipped cream
2. Layer of crumbs
3. Layer of cherries

Repeat and finish with whipped cream on top and cherry.


Hey, this actually sounds good...I'm not too sure about the pumpernickel bread,but I'm willing to give it a try. Now, if only I could find some gluten free pumpernickel bread .....

Nancy Apples Recipe

This is really hard to read! I don't know if I got it right or not.
Layer 4 cups of sliced apples in the bottom of a greased baking dish. Sprinkle with 1 Tablespoon lemon juice.
Combine1/2 cup brown sugar, 1/2 cup rolled oats, 1/2 cup sifted flour, and 1/3 cup butter.
Sprinkle this over top of apples and bake in a 350 degree oven for 40 minutes (or a 375 degree oven for 30 to 35 minutes).

It looks like there are 3 recipes going on here! There are 2 on the front, and another crumb mixture on the back (no picture). I used the crumb mixture on the back, since I was sure of what it said :)
Looks like Grammy was trying out different mixtures.

Easy Bread Pudding Recipe
3 slices slightly stale bread (whole-wheat, oatmeal or, unbleached white are recommended)
3 Tablespoons soft butter
1/2 cup raisins
3 eggs
1 teaspoon salt
1 teaspoon vanilla
1/3 cup brown sugar
2 cups milk, scalded
Butter bread and cut into cubes. Arrange bread in 1 1/2 quart casserole or baking dish and sprinkle with raisins. Beat eggs with salt, vanilla and sugar and add scalded milk slowly, stirring as you pour.
Then pour mixture over bread and set in a pan of hot water that comes up about an inch around the dish. Bake, uncovered, in 350 degree oven for 50 minutes or until set. Serves 5 to 6.

Rhubarb Crisp Recipe

Rhubarb Crisp Recipe
First:
4 cups 1" cut rhubarb
1/2 to 2/3 cup granulated sugar
1 Tablespoon grated orange peel
Dash salt
Combine and place into 8 inch baking dish.
Then:
1/2 cup brown [sugar]
1/2 cup rolled oats (Quick)
1/2 cup sifted flour
1/3 cup butter
Combine and sprinkle over above.
Bake for 40 minutes at 350 degrees. Serves 6. Serve with whipped cream or vanilla ice cream.

Curried Fruit Recipe

Curried Fruit Recipe
1 can pineapple chunks
1 can peach halves
1 can pear halves
1 can apricot halves
1 jar apple rings
1 Tablespoon flour
1/2 cup brown sugar
1 stick butter
1 cup sherry
1 teaspoon curry
Drain fruit and arrange in alternate layers in a large, medium to deep casserole.
Cook and stir butter, flour, sugar, curry and sherry in top of double boiler until smooth and thickened. Pour over fruit. Cover and let stand overnight in refrigerator.
Bake at 350 degrees for 30 minutes.
Serves 10 to 12.

Double Feature Fruit Recipe from Del Monte Clipping



Double Feature Fruit

1 can (15 1/4 oz.) Del Monte Pineapple Chunks In Its Own Juice
2 oranges
2 apples
2 ripe Del Monte Bananas
Honey

Drain pineapple, reserving juice. Pare oranges and slice thinly. Slice apples into thin wedges. Slice bananas. Dip apples and bananas in reserved juice to prevent browning. Arrange fruits in compote or other dish. Combine reserved juice and honey to taste; mix well. Serve over fruit. Garnish with coconut or grated orange rind, if desired.
6 to 8 servings.

This is so simple, but sounds so good too. I don't know what a compote is...and I don't really know if I can slice an orange thinly?

Meringue Recipe

Meringue
3 egg whites
3/4 c. sugar
1/2 tsp. vanilla
Beat egg whites until almost stiff. Gradually add sugar, and then vanilla, and continue beating until peaks stand up.
Spoon into well-greased pie plate, being sure that the batter touches the sides at all points.
Bake for about 40 minutes in a 300 degree oven.
Lin '85
I bake this amount in an 8 inch Pyrex pie plate for four servings.
Meringue is done when the bottom is light and brown.

This recipe is from "Lin '85" Again, I don't know who Lin is, but my sister says she remembers that name from somewhere, maybe I'll find out who she is sometime.
I don't really know what to do with a Meringue, I just thought of it for toppings on pies, or as small cookie type meringues, but not ever as a large one like this.

Ice cream pie a la Mattson Recipe

Ice cream pie a la Mattson
A round, trouble free frozen dessert that can be prepared days or weeks before the party:
Take a 10-inch spring pan for molding the dessert. Line the bottom with crushed macaroon crumbs. Partially thaw a 1/2 - gallon carton of any ice cream you like. make a layer of the entire 1/2 - gallon, spooning in on top of the macaroon crumbs and flattening out the top. Pour 1 can of Hershey's chocolate sauce on top of the ice cream then another layer of macaroon crumbs and freeze this mixture. Remove from freezer and add a second 1/2 - gallon of ice cream (any flavor you like) on top of the frozen chocolate sauce. Refreeze until serving time. Unmold the pie by springing open the mold. Place pie on a platter and garnish all over with a layer of about 3 or 4 finely crushed Heath candy bars that have been chilled.
Serves 10-12

Apple Tort Recipe


Apple Tort

1 egg-beat and add 3/4 cup sugar. Sift together 1/8 teaspoon salt, 1/2 cup flour, and 1 teaspoon baking powder then add to egg/sugar mixture. Then add 1 teaspoon vanilla, 1/2 cup nut meats, 1 cup apples (peeled and diced fine).
Bake for about 40 minutes in a 350 degree oven in a round pie pan or square cake pan.

Pumpkin Cake Recipe


Pumpkin Cake

4 eggs
2 cups white sugar
1 1/2 cup oil
1 teaspoon salt
3 teaspoons cinnamon
2 teaspoons baking soda
1 1/2 cups pumpkin
1 cup chopped pecans
2 cups flour

Mix well in a large bowl. Bake for 40 minutes at 350 degrees in a 9X13 pan.

This would be a great way to use up some of the pumpkin we have in the freezer. I think my daughter would love to make this for us.

Apple Crunch (Quick) Recipe


Apple Crunch (quick)

1 can apple pie filling
1 teaspoon lemon juice
1/2 teaspoon cinnamon

Mix the above together and place into an ungreased 9 inch pie pan or baking dish (8X8X2).

Then mix together the following with your hands and sprinkle over top of the apples.
1/4 cup margarine
1/8 cup brown sugar
1/2 cup flour
1/4 cup pecans

Bake in a 450 degree oven for 10 minutes or so.

Using a pie filling for this is such a great idea! Much easier, and I have one in the basement. My husband may be having this next week.

Sugared Pecans Recipe


Sugared Pecans Recipe

1 lb. pecans
3/4 teaspoon salt
1 teaspoon cinnamon
1 cup sugar
1 egg white
1 Tablespoon water

Beat egg whites and water till frothy (not stiff). Stir in sugar, salt and cinnamon. Add pecans and stir well until completely covered (???). Spread nuts on large baking sheet and bake at 200 degrees.

I remember Grammy's pecans, she would have them every year for Christmas. They are very good--I will definitely be making these soon. Now that I think about it, I thought she used walnuts...either way, these are yummy!
I don't know how long to bake these, so I googled sugared pecans and found Simply Recipes.
Their recipe for sugared pecans uses a 300 degree oven. They bake for 30 minutes, and half way through they stir them up with a fork. Grammy's recipe says 200 degrees--so it would be longer.
This recipe at Cooks.com says to bake for 45 minutes in a 200 degree oven, stirring every 15 minutes.

Strawberry Shortcake Recipe


Strawberry Shortcake
4 cups sliced strawberries
6 to 8 Tablespoons sugar
2 cups biscuit mix
2/3 cup half-and-half
1 egg, beaten
1/4 cup butter or margarine, melted
Sweetened whipped cream or frozen whipped topping, thawed
Combine strawberries and 4 to 6 Tablespoons of the sugar. Chill.
Combine 2 Tablespoons sugar, biscuit mix, half-and-half, egg and margarine and beat on high speed of mixer 30 seconds.
Spoon batter into greased 8-inch cake pan. Bake at 425 degrees for 15 to 20 minutes, or until golden brown. Turn out onto wire rack to cool.
Slice shortcake crosswise into 2 equal parts. Place bottom half of shortcake, cut side up, on serving plate; spoon half of strawberries onto bottom layer. Top with second layer of shortcake, cut side-down; spoon on remaining strawberries. Top with whipped cream. Serves 6 to 8.
NOTE: 4 cups of any sliced fresh fruit may be substituted for strawberries.

Grammy's Peach Clafouti Recipe


Peach Clafouti

Sprinkle well buttered 1 1/2 quart shallow oval baking dish with 2 Tbs sugar. Distribute 3 cups sliced pealed peaches over sugar.

Combine the following in a mixing bowl:
1 cup milk
1 cup light cream
3 eggs
1/4 cup flour
pinch salt
Blend for 2 minutes.
Add 3 Tbs sugar and one teaspoon vanilla. Blend mixture for a few seconds. Pour this over the fruit.
Bake in pre-heated 375 degree oven for 45 to 50 minutes or until puffed and golden. Sprinkle confectioners sugar over the clafouti.
Serve barely warm.

I had no idea what a clafouti was when I found this recipe. None whatsoever. I spelled it "clafonti" when I googled it, but luckily Wikipedia has some great search terms and they set me straight. I then found a nice recipe blog , Cooking with Amy, and she explains what a clafouti is (and how to pronounce it).



Apparently a clafouti is caky and pudding like and is a traditional French dessert. Who knew?

Company Bread Pudding Recipe


Company Bread Pudding
2 beaten egg yolks
1 12 oz carton (1 1/2 cups) cream style cottage cheese
3/4 cup sugar
3/4 cup milk
2 Tbls butter
1/2 tsp ground allspice
1/2 tsp ground mace
(1/2 tsp ground mace) this is repeated--I think it's a mistake
1/3 tsp ground cloves
2 cups soft bread crumbs , 3 slices
1/2 cup raisins
1/2 cup whole cranberry sauce
2 egg whites
Combine egg yolks, cheese, milk, 1/2 cup of the sugar, butter, spices, and 1/2 tsp salt. Stir in bread crumbs and raisins. Put into a (greased?) 8 X 1 1/2 inch round baking dish. Spoon cranberry sauce on top.
Beat together egg whites and the rest of the sugar (1/4 cup) until stiff. Spread over cranberry sauce. Bake at 325 degrees for 40 to 45 minutes.

This looks good, but I'm not sure about the cranberry sauce. The egg whites on the top probably make a meringue crust. I really want to try this, maybe I'll take it to Thanksgiving dinner.

Sherried Bread Pudding Recipe

Sherried Bread Pudding

3 tablespoons butter
3 cups milk
1/3 cup currants
1/4 cup brown sugar
4 eggs
2 cups stale bread, cubed
1/4 cup cram sherry
1/4 cup apricot jam (optional, but nice)
Slivered almonds (optional)

Melt butter in large saucepan and add milk, currants, and sugar to heat. (Do not boil.) In a bowl, beat eggs and add cubed bread, milk mixture, and sherry. Pour into a 1-quart casserole dish and bake at 375 degrees for 35 to 40 minutes or until set.
Remove pan from oven and spread with jam and sprinkle with slivered almonds if desired.

The apricot jam is optional, but nice. The almonds are only optional--I guess the person who wrote this recipe didn't think the almonds were nice?





Raisin Rice Pudding Recipe


Raisin Rice Pudding
4 eggs
3/4 cup sugar
2 cups milk
1 1/3 cup cooked rice
1 1/2 teaspoon lemon juice
1 1/2 teaspoons vanilla
1 Tablespoon butter, melted
1 teaspoon nutmeg
2/3 cup seedless raisins
Preheat oven to 350 degrees. Grease 2 quart casserole. Combine eggs, sugar and milk, beat well. Fold in rice, lemon juice, vanilla, melted butter, nutmeg and raisins. Pour into prepared casserole and put the dish into a pan of boiling water. Bake at 350 degrees for approx. 45 minutes.

If this is the same rice pudding I ate as a kid--it is yummy.










Bread and Butter Pudding Recipe

Bread and Butter Pudding

6 slices well-buttered bread, white or raisin, with the crusts cut off
Handful of raisins or sultanas
2 eggs
1 1/2 Tablespoons sugar
Large pinch of cinnamon
1 1/4 cups creamy milk

Lay bread in layers, buttered side up, in a buttered pie dish, sprinkling fruit between slices. Beat together eggs, 1 Tablespoon sugar, and cinnamon, then beat in milk. Pour over bread and leave to soak for an hour. Preheat oven to 275 degrees.
Just before putting pudding in oven, sprinkle with remaining sugar and bake for 1 1/2 hours. It will puff up and top will become a delicious golden brown crust.
Serves four.
