Raisin Rice Pudding Recipe


Raisin Rice Pudding
4 eggs
3/4 cup sugar
2 cups milk
1 1/3 cup cooked rice
1 1/2 teaspoon lemon juice
1 1/2 teaspoons vanilla
1 Tablespoon butter, melted
1 teaspoon nutmeg
2/3 cup seedless raisins
Preheat oven to 350 degrees. Grease 2 quart casserole. Combine eggs, sugar and milk, beat well. Fold in rice, lemon juice, vanilla, melted butter, nutmeg and raisins. Pour into prepared casserole and put the dish into a pan of boiling water. Bake at 350 degrees for approx. 45 minutes.

Bread and Butter Pudding Recipe

Bread and Butter Pudding

6 slices well-buttered bread, white or raisin, with the crusts cut off
Handful of raisins or sultanas
2 eggs
1 1/2 Tablespoons sugar
Large pinch of cinnamon
1 1/4 cups creamy milk

Lay bread in layers, buttered side up, in a buttered pie dish, sprinkling fruit between slices. Beat together eggs, 1 Tablespoon sugar, and cinnamon, then beat in milk. Pour over bread and leave to soak for an hour. Preheat oven to 275 degrees.
Just before putting pudding in oven, sprinkle with remaining sugar and bake for 1 1/2 hours. It will puff up and top will become a delicious golden brown crust.
Serves four.

Apple Prune Dowdy Recipe

Apple Prune Dowdy

12 ounces (about 2 cups) pitted prunes, halved
2 cups sliced apples
1 cup orange juice
1/4 cup packed brown sugar
1/2 teaspoon cinnamon
1/4 cup butter, softened
1/4 cup sugar
1 egg
3/4 cup flour
1 teaspoon baking powder
1 teaspoon grated orange peel
1/4 teaspoon salt
1/3 cup milk

In 1 1/2 quart shallow baking dish layer prunes and apples; pour juice over and sprinkle with brown sugar and cinnamon. Cover and bake in oven at 350 degrees F about 30 minutes until apples are tender.

Meanwhile, in mixing bowl cream butter and sugar until fluffy. Beat in egg, flour, baking powder, peel and salt. Stir in milk to blend thoroughly.

Spread evenly over fruit and continue to bake, uncovered, about 30 minutes until top is lightly browned.

Break up top before serving and top with cream or vanilla ice cream.
Makes six to eight servings.

Prunes? I do like prunes, actually, but I don't know about this recipe. I've never really had them in a recipe before. Just plain.
