Calabaza con Carne Recipe (with beef)


A.
1 lb. ground beef
2-3 9" zucchini (chopped)
1 lg. onion (chopped)
1 lg. green pepper (chopped)

B.
1 can stewed tomatoes
1 can (small) tomato sauce
1/2 cup chopped celery and leaves
1/4 cup parsley (chopped)
1/8 to 1/4 tsp. powdered garlic
1/8 tsp. cumin

C.2-3 ears of fresh corn (scraped off)
OR box of frozen


A. Saute until meat is done.
B. Simmer 20 minutes.
C. Simmer 10 minutes.


Cook all "A" ingredients in a large skillet on medium to medium high heat until meat is cooked through (no pink remains). Drain off grease. Add all ingredients from "B" and simmer for 20 minutes. Add "C" and simmer an additional 10 minutes, or until heated through.

Serve and enjoy!
