Pear-Spinach Salad Recipe with Dressing


Core and slice 2 pears, combine with
4 cups torn spinach
chilled torn lettuce
-drizzle with lemon nut dressing-


Lemon Nut Dressing1/3 cup coarsely chopped walnut
Bake 350 degrees 10 min- 12 min.

Combine with:
1/2 cup salad oil
3 Tbl. lemon juice
2 Tbl. vinegar
1/4 tsp. salt
1/4 tsp. sugar
1/4 tsp. tarragon
1/2 tsp. pepper
1/4 tsp. grated lemon peel
Mix well.

Okay, I tried this and it just didn't go over well with my family, or me. I tried to like it, but the lemon dressing is too lemony!
You'll like it if you like lemon--but I would have preferred some ranch dressing!

Cranberry Orange Salad Recipe

This looks easy, and good. But what is orange cranberry relish??
Grammy really liked using jello!


3/4 cup boiling water
1 pkg. lemon gelatin
Orange cranberry relish, frozen

Hippy Salad Recipe

Ok, so this is probably not called "Hippy" Salad, or is it? One thing about Grammy--I can't read her writing (and I don't think I'm the only one!) This recipe was from one of her very good friends and it looks really good!



1- 16 oz can whole cranberry sauce
1- 11 oz can mandarin oranges (drained)
1/2 cup sour cream
1/4 cup nuts
1 3 oz package cherry Jello
1 cup boiling water

Dissolve jello with water, beat in sour cream and cranberry sauce-fold in nuts and oranges.

This is gluten free--just watch the sour cream. I buy Daisy brand sour cream.
Also, I think Jello is also soy free. So this would be soy free and gluten free. Always read labels!

Crab Salad Stuffed Avocado Recipe

I do remember Gram's fondness of Worcestershire sauce. I still don't know the proper way to pronounce it though!


Crab Salad Stuffed Avocado

2 ripe avocados chilled
1 lb. backfin crabmeat

Dressing:
1/2 c. salad dressing
1/2 c. finely chopped celery
1/4 c. finely chopped pimiento
2 tsp. lemon juice
dash Tabasco
1/8 tsp Worcestershire Sauce


Halve avocado lengthwise - remove pits and peel, sprinkle with lemon juice and salt. Arrange each half on bed of greens. Fill with crab meat, top with dressing.

I'm gluten free, along with my kids. This recipe looks gluten free--you would just have to watch the worcestershire sauce--I get Lea and Perrins. (Always read labels! Don't take my word for it.)
My sister LOVES avocado and it's wearing off on me. Crab salad with avocado sounds really good, or it could even be chicken salad with avocado to make it a less expensive dish.

Savory Eggs Recipe



1 c. grated cheese--sharp cheddar
2 Tblsp. butter
1/2 cup H & H ( half and half??)
1/2 tsp each salt and pepper
1 tsp prepared mustard
6 beaten eggs
a little garlic
Optional-Sauted onions and green pepper.

Place cheese in greased 8 inch baking dish-Dot with butter.
Beat together eggs, cream and seasoning. Pour over cheese.
Bake at 325 degrees for 35 to 40 minute.
Serves 6-May be doubled-takes longer to bake.

Pineapple Salad Recipe

Grammy used to make us this pineapple salad. It is one of the foods I remember most from my visits with her. No recipe is really needed and I can't find it in her recipe box, but it is such a "Grammy" recipe that I had to include it.



Ingredients:
iceberg lettuce
cottage cheese
pineapple slices
maraschino cherries


Layer ingredients on individual plates (small plates):
Start with a layer of lettuce leaves to cover the bottom of the plate.
Then add cottage cheese--maybe 1/4 cup, or to taste.
Next add a slice of pineapple ,
and top with a maraschino cherry.

I always had mixed feelings about this salad; it was really yummy--but, as a kid, I never wanted to eat the lettuce. I did eat the lettuce and remember it was pretty good with the pineapple and cherry juice on it, but I still didn't want to eat it the next time around.

Sausage Casserole Recipe


1 1/2 cups noodles
1 lb sausage
1/2 chopped onion
1 can mushroom soup
3/4 cup evaporated milk
1/3 cup water
1 cup grated cheese
1/3 cup dry bread crumbs
1 can mushrooms
1 Tbsp. melted butter

Break noodles and boil in salted water. Brown sausage, onion, and mushrooms together. Remove from stove and pour off all but 1 Tbsp. of fat. Add next 4 ingredients and pour into buttered 1 1/2 quart casserole. Top with bread crumbs [that have been] mixed lightly with butter. Bake 30 minutes.
Serves 6-Macaroni can be used instead of noodles.

Lasagne

1/2 c. onion (chopped) sauteed in 2 T. oil

Add 1 lb. ground chuck
(Cook until red color disappears)

Add:
2 minced garlic cloves (or garlic powder or salt)
1 1/2 tsp. salt
1/4 tsp. pepper
1 tsp. oregano
2 T. parsley
1 large can tomatoes
2 small cans tomato paste
1 T. grated Parmesan


Simmer 30 minutes.
Cook noodles.
Arrange in pan -- 1/3 meat sauce, layer of noodles, layer of mozzarella cheese, layer of cottage cheese, 1 T. Parmesan. Repeat ending with rest of sauce and Parmesan.
Bake 30 minutes at 350 degrees.

You really need to read through this recipe before beginning ! There is cottage cheese (and mozzarella!) in there - but it isn't mentioned until you are to use it. I've put all ingredients in bold to make it easier.

I wonder if this is cheaper than using canned spaghetti sauce? It is probably healthier if not cheaper.
I don't cook my noodles anymore when making lasagna. I just layer them right into the dish and bake. They always cook during the baking time and turn out just fine.

Speedy Gazpacho Recipe

Speedy Gazpacho

2 - 10 3/4 oz cans of condensed tomato soup
2 envelopes or cubes of instant beef broth
1/4 cup red wine vinegar
1 Tablespoon salad oil
1 teaspoon salt
1 Tablespoon Worcestershire sauce
dash of Tabasco
2 medium tomatoes, chopped
1/4 cup chopped green pepper
2 Tablespoons minced onion

In large bowl pour undiluted soup. Heat to boiling 2 soup cans of water. Remove from heat and stir in beef broth until dissolved. Add broth to tomato soup. Stir until blended. Stir in remaining ingredients. Cover and refrigerate. When serving, the soup can be garnished with corn chips.

Vichyssoise Soup Recipe

Ahhh... I like it when it is cut out of a magazine. So easy to read.



Vichyssoise Soup Recipe


4 good-sized leeks - they must be very white ones
1 medium-sized onion
2 oz. butter
6 medium-sized potatoes
2 1/2 pints chicken stock
Salt, white pepper
1 pint scalded milk
2 pints cream

Wash the leeks and slice the white parts finely. (Reserve the green parts for flavoring in other soups.) Peel and chop the onion. Heat the butter, add the leeks and onion and cook gently until soft, but keeping them white. Add the chicken stock and chipped potatoes and cook until tender. Add salt and pepper to taste and rub through a sieve or puree in a blender and then rub through a sieve.

Return the soup to the pan, add the milk, stir this well into the soup, then add the medium cream, still stirring. Bring the mixture to a boil, add more slat and pepper if required, remove from the heat and cool. When cool, add the cream and chill thoroughly. Serve with chopped chives.

This soup may well be made 24 hours in advance. Makes 4 to 5 servings.

:) Miracle Soup!

This one made me laugh. OK, so I didn't laugh, I smiled. But if anyone would have been around I would have laughed and told my story.

This looks like the Cabbage Soup Diet soup. Yes, I did this diet once. The deal is that you eat only one certain food a day for 7 days. One day is beef, one day is tomatoes, etc. You can also eat all you want of this cabbage soup. Oh, you also have to drink tons and tons of water. I was in high school when I did this diet and I remember having to go to the bathroom during "Discreet Mathematics" every day that week. I can't remember if it worked, but I do remember that when I was on the tomato day I breaded and fried those darn tomatoes! I was hungry! What the heck is Discreet Mathematics anyway?

6 large onions
2 green peppers
tomatoes, tomato juice or V8
1 large cabbage
1 bunch celery
Lipton Onion Soup Mix or 5 beef bouillon cubes

You can add string beans or other low cal vegetables.

1 lb hot sausage
10 oz sharp cheddar cheese
3 1/2 cups Bisquick

Brown sausage, drain grease. Take out of skillet and use skillet to melt cheese. Mix all ingredients together. Roll into 1 " balls. Bake 10 minutes at 400 degrees.

This must be one of those classic, well known recipes - I've had them and got the recipe from someone a few years ago. The kids really like them (before we went gf).

They didn't turn out very well with gluten free flour, probably because the gf flours absorb more liquid, so they were too dry.

1 1/2 pounds lean ground beef
2 cloves garlic, minced
2 tablespoons butter or margarine
3 8-ounce cans tomato sauce
Salt and pepper to taste
1 teaspoon crushed basil
1 teaspoon crushed Italian herbs
2 teaspoons sugar
1 cup cottage cheese
1 8-ounce package cream cheese, softened
1/4 cup dairy sour cream
1/2 cup chopped onion
1/3 cup chopped green pepper
1 1-pound package thin egg noodles
2 tablespoons butter or margarine
1 cup grated Parmesan or Cheddar cheese
1/2 green pepper cut in strips
1 medium tomato, peeled, sliced


Brown ground beef and minced garlic in 2 tablespoons butter or margarine. Add tomato sauce, slat and pepper, basil, Italian herbs and sugar. Simmer for 15 minutes, stirring frequently. In bowl, blend cottage cheese, cream cheese, sour cream, onion and chopped green pepper. Grease a 9X13-inch casserole and set aside. Cook noodles according to package directions, cutting down on cooking time by 2 minutes. Drain noodles and stir in 2 tablespoons butter or margarine and sprinkle with salt and pepper to taste. Put 1/2 the noodles in bottom of casserole, making an even layer. Spread cheeses over this and follow with rest of noodles. Cover with ground meat and top with grated Parmesan or Cheddar cheese. Lay strips of green pepper and tomato slices in a design over the top layer. Bake at 350 degrees for 30 minutes or until hot and bubbly.

Serves 8

Gotterspeise Gods Meal

Gotterspeise is translated as "food of the gods" and "jelly" and "Jell-o". Hmmm...who knew that jell-o was so good that even "the gods" like it?

This is handwritten, so this is my best attempt at a translation.





Gotterspeise Gods Meal



1 jar (1 pound 1 oz) dark sweet pitted cherries, leaving fruit in jar refill jar c light rum (I'm guessing this means that you should drain the juice from the jar, then fill back up with light rum.)
Marinate in refrigerator for 3 days.
Dry (?) slices of dark pumpernickel bread for 2 - 3 days - grate into 2 cups of crumbs which resemble coarsely ground coffee. ( I can't figure out how many slices you need.)

When ready to assemble dessert, drain cherries - reserving the rum. Add rum to crumbs until slightly moist. Whip 1 pt. whipping cream then add half of whipped cream to crumbs.

Fill 4 parfait glasses: (This is my interpretation of what she wrote - not verbatim.)

1. Dollop of whipped cream
2. Layer of crumbs
3. Layer of cherries

Repeat and finish with whipped cream on top and cherry.


Hey, this actually sounds good...I'm not too sure about the pumpernickel bread,but I'm willing to give it a try. Now, if only I could find some gluten free pumpernickel bread .....

Chicken Rice Oriental Recipe

Wow, two recipes in one day! I'm on a roll. It's so much easier to post with no picture, my scanner is a pain. This is not handwritten - it's cut out from a magazine.



Chicken-Rice Oriental Recipe

1 small clove garlic, minced
2 TBS oil
1 1/2 cups diced or slivered cooked chicken, ham, beef or pork (Or could we use turkey?)
1/2 medium red or green pepper, cut into strips
1/8 teaspoon pepper
2 cups water
1 1/2 cups MINUTE Rice (Must be from a Minute Rice ad.)
1 1/2 cups shredded raw spinach, lettuce or escarole
1 TBS soy sauce


Saute garlic in oil in skillet until lightly browned. Add chicken, red pepper, pepper, and water. Bring quickly to a boil over high heat. Stir in rice. Cover; remove from heat and let stand 5 minutes. Just before serving, add spinach and soy sauce, tossing lightly. Serve with additional soy sauce, if desired. Makes 4 servings.

Chicken Heart Paprika Recipe

This one isn't for the faint of heart :)

Chicken Heart Paprika Recipe


4 chicken hearts, split
1 large onion
1 lb sour cream (Be careful with this - I can't really read her writing - I don't know if it is a pound of sour cream or something else.)
2 TBS butter

Flour and salt chicken pieces - chop onion. Brown onion and chicken in butter. Add water to prevent sticking. Cover and simmer until tender. Add sour cream and paprika.
Heat and serve over boiled noodles or add noodles to sauce. Chicken thighs may be used. (Now that's my kind of paprika - chicken thighs!)

I make a similar "Paprikash" with cut up chicken breast meat. I add lots of garlic, cream cheese and heavy cream. It's enough to kill you, but it's good!

Turkey Florentine Recipe


It's been awhile since I last posted a recipe. I didn't run out of recipes, just time. There are a TON more recipes to post.


Turkey Florentine

8-pound Butterball breast of turkey, thawed
1 package (6 ounces) long grain and wild rice mix
1 package (10 ounces) frozen chopped spinach, thawed, drained
3/4 cup diced fully cooked ham

Roast turkey according to package directions. Prepare rice according to package directions. Stire in spinach and ham. Place in 1 1/2 - quart buttered casserole. Bake with turkey last 45 minutes of roasting time. Slice turkey and serve with florentine rice.


This would be a great way to use up leftover turkey AND ham this holiday season!
